The Underbar team - Chef Derek Boath and Sommelier Tony Schuurs work together to create an unparalleled bespoke dining experience, showcasing the best of what our region offers.

Derek brings a deep technical ability and unwavering focus on excellence to the kitchen, working in tandem with Tony who has a passion for pushing the boundaries of wine appreciation.

Derek's culinary career spans more than twenty years, with experience gained at some of the world's top restaurants, including three michelin star new york restaurant "per se". 

Tony's experience over the past decade has seen him work under the guidance of some of the industries most respected winemakers.
